Harvest 2004 : Quality and quantity

| After a rainny august, there was a very sunny september. It's the best point for the maturation ( approx. 10°5 % vol. and acidity 7 g/l ). It's the result of all our work during the year to produce high quality grapes : The vineyard is cultivated with old techniques that respect the Terroir : we plough the earth to ensure the roots grow deep into the sub-soil and to preserve life in the soil,we prun shortly, to limit the production,... Now the barrels are full, the alcoolic fermentation is finished. It's the time for the "batonnage".
